Simnel cakes were traditionally shared at Easter or on Mother’s Day which falls on the fourth Sunday of lent. They are fruitcakes with a layer of marzipan baked into the middle and toasted marziapn on top. The distinctive look of a simnel cake comes from the marzipan balls representing the disciples. There are often 11 disciple-balls on a simnel cake. On our version there are 12 to include Judas and to symbolise the theme of forgiveness and the overcoming of sin which Easter is about.
